How A Meat Scientist Turned His Talents To Plant-Based Chicken Richard “Rody” Hawkins built a career as a meat scientist at companies like Oscar Meyer, where a little side project he worked on in the early days ultimately became Lunchables. Later, he led a team that worked on Slim Jim snacks as part of a company that ultimately was acquired by Conagra. He left Conagra in 2002 and went out on his own, spending the next 15 years working with different companies to help them develop new products and food technologies. Along the way he began learning about plant-based production and a few years ago he went all in, launching Improved Nature to sell soy-based chicken products that more closely replicate animal meat. The brand rolled out first in foodservice channels in 2017, building up a clientele in both the U.S. and Europe, and now it’s growing into retail.
